Corks and Curds has a quick list of simple suggestions for what wines to serve with what cheeses. I'll definitely be giving a "very dry white" a try with parmesan. The list doesn't get into specifics, so classic pairings like gorgonzola with sauternes (try this if you haven't already!) don't appear.
